Tabbouleh Recipe

I am one of those people who finds eating healthy foods really challenging (sounds terrible I know). I can’t be the only one who doesn’t get any fulfilment out of salad leaves and the odd tomato.

However, i have finally found a dish that is quick to make (as slaving hours over a meal is not appealing to me either) and sends my tastebuds dancing!

Tabbouleh Couscous

150g of couscous

1 lemon

2 spring onions

2 large ripe tomatoes

1/4 of cucumber

Olive oil


Pour boiled water over the couscous (in a deep serving dish) until the water line is just above the couscous line.

Leave to cook/soak for 10minutes.

In this 10minutes – Dice the onions, tomatoes and cucumber. Add and mix into the couscous once cooked.

Next add 3 table spoons of olive oil and a pinch of salt to the couscous and mix in well. Squeeze the whole lemon into the couscous and stir well.

If it tastes fresh and flavoursome SERVE IT UP!

KEEP IN MIND – you can keep adding olive oil and salt so the dish is at the taste and consistency you want.
